Make your own Amazake and Shio-Koji - Kirsten & Christopher shockey, Fermentworks - 11am-12:30pm

In this hands-on class you will learn how to use the power of koji enzymes to ferment grains, beans and other foods. Kirsten and Christopher Shockey will discuss the importance and health benefits of fermenting grains and teach you how to make your own amazake and shio-koji as well as how to use these ferments in your daily meals.

Wild Fermented Grains and Legumes - Jillian ross, the ferment lady - 11am-12:30pm

We’ll discuss several methods of fermenting beans and grain from around the world, and enjoy samples from an array of basic and traditionally prepared items such as hummus, acaraje, porridges, and gruels.

fermenting with honey - jennifer holmes, hani honey co. - 11am-12:30pm

Fermented honey and mead are two of my favorite things! Both super rich in history, culture (pun intended), flavor, versatility, and enjoyment of the mind, body, and soul. Together, we will prepare, share, and enjoy some of this ancient fermented brew, and honeys, with tasty treats, from savory to sweet, using roots, fruits, herbs, and spices focusing on what is regionally accessible.

making Lacto-fermented Hot Sauce - grayson austin, candela hot sauce - 1:30-3pm

In this workshop, we will talk about how to prepare lacto-fermented hot sauces. We will go through the step-by-step process and discuss different methods of preparation as well as pepper selection, room temperature, and more.

Composting: Kraut for Your Plants - mike meier, Colab Farms - 3:30-5pm

The microbial and chemical action of fermentation makes our foods more delicious and nutritious. Similar processes decompose the trimmings from your pickling exploits into nutritious compost for your plants. Learn the basics of good composting, setup designs for small to large operations, troubleshooting, and how to make and use the magical elixir that is compost tea.

Spill the Tea: Brewing Quality Teas for Kombucha - nella fusco, awaken kombucha - 1:30-3pm

This class will focus on the main ingredient of kombucha…TEA! We will dive into different teas, their flavor profiles, and how they ferment. We will also discuss SCOBYs and how they change with each fermentation.

#WholeUtilization at Home and in the Restaurant - Alex Henao, professional chef - 3:30-5pm

It doesn’t all have to go to the compost! Learn to how stretch your food and preserve it from the approach of more zero waste mindset. Whether at home or in a professional environment, Alex will cover a variety of techniques, from amino sauces to vegetal wines to vinegars.

Join Connor Meyer, head brewer at Avid Brew Co., for an all grain brewing class! This home brewing workshop caters to all ability levels, from novice to advanced. Don’t forget to check out Avid Brew Co.’s home brew supply shop at their brick and mortar, as well as their booth at Florida Ferment Fest!

sourdough for starters - brett wiewiora, Gulf coast sourdough - 3:30-5pm

Learn from Brett Wiewiora, Co-Founder and Head Baker of Gulf Coast Sourdough, about the basics of sourdough baking. Through his no-fuss approach, Brett will demystify the sourdough baking process and show how to incorporate great bread into anyone’s weekly routine. All experience levels welcome. And at the end, you'll get starter to take home, dough to play with, and we’ll all enjoy some delicious bread baked during the class!
