In this class you will learn what all the cool kidz are talking about—using koji to create flavor. Koji, or Aspergillus Oryzae, is a mold with super powers. Kirsten and Christopher Shockey will demystify koji while teaching you everything you need to know in order to grow koji and use it to transform flavor from traditional misos to modern tasty pastes and completely new applications to find uses for fermenting dairy products, using stale bread and tenderizing meat.

Master class will take place on Saturday, Nov. 9 at St. Pete Ferment’s kitchen from 10 a.m. to 3 p.m.
